Life has changed by leaps and bounds since Rio happened. And finding recipes to keep the little ones hunger satiated is one of the other un discussed full time job that most mums find themselves doing. And one such recipe that is always a favorite at home is PANCAKES. First of all, they are extremely quick and easy to prepare, with only a few basic ingredients that everyone has at hand (yes everyone: egg, milk, flour, sugar, baking powder – that’s it!). Then, they turn out perfect each single time I make them, with a lovely small round shape, and an amazing fluffy and light texture. And finally, they bring Rio to the kitchen without even having to call him for breakfast. Infact now he even helps me make them.
Over the years I have tried so many recipes for homemade pancakes & it took me a little while to perfect this one. But when we did Boy Oh! Boy was it glorious and they turn out exactly like that every single time. I am not a cook who depends too much on measurements, usually I am the one who wings it, but this is an exception to the rule. My boys love pancakes, love helping make pancakes and so finding the right recipe was a must. After several attempts and failures mind you, I finally have perfected the recipe and it is delicious!

We all love fluffy pancakes, but sometimes our pancakes turn out flat and thin. This is how I make my pancakes in just a few easy steps:
1.First, mix all the dry ingredients.
2.Then mix the wet ingredients in a separate bowl.
3.Add the dry ingredients to the wet ones and mix (do not overmix).
4.My secret: let the batter sit for a 5-7 min. It will allow the baking powder to activate and make your pancakes fluffy.
5.Heat butter in a non stick pan and once hot, add one ladle full of batter at a time and don’t spread it too thin.
6.Cook for a minute, until you see holes on the entire surface, about 45-60seconds. Flip, and cook for another minute.
& voilà! That’s it, you have perfectly fluffy pancakes every single time.

Also another little trick that we have discovered to make pancakes healthier and yummier is adding carrot puree (boil and blitz one 4-5″ carrot for the above measured recipe). The pancakes look gorgeously orange and deliciously sweeter. We also sometimes add (frozen or dried) blueberries to the mix and serve with just whipped cream or if we are feeling indulgent then a scoop of vanilla ice cream.
